Cut half a head of cabbage in half and remove the core.

Shred the cabbage leaves and slice half an onion.

Peel and grate 2 medium carrots, then soak them in water and squeeze out excess water.

Combine the cabbage, onion, and carrots in a bowl.

Add 1 cup of boiling water to the bowl and stir.

Add 1 cup of vinegar, 1 tablespoon of oregano, and 2 teaspoons of salt to the mixture.

Refrigerate the salad overnight to allow flavors to blend.

In a hot pan, add 2 teaspoons of oil and heat until smoking.

Add 1 diced green pepper, 1 diced red pepper, and 1 small diced onion to the pan.

Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, and cook until the vegetables are roasted.

Mash 1 can of black beans in a separate bowl using a potato masher.

Add the mashed black beans to the pan with the peppers and onions, mixing well.

Add 3 cloves of chopped garlic to the mixture and stir to combine.

Let the filling cool before adding cheese to it.

The next day, combine 4 cups of masa harina with 2 teaspoons of salt and 3 cups of water to form a dough with a clay-like consistency.

Take the filling from the refrigerator and add cheese to it before stuffing the dough.
