Originating from the Ottoman Empire, these flaky pastries have been adopted and adapted in various cultures, with fillings ranging from potatoes to cheese and spinach. Today, they are a staple in Israeli cuisine, reflecting the diverse culinary influences of the region.

Boil water in a large pot.
Add the peeled potatoes to the boiling water and boil until softened.
In a skillet, heat half of the olive oil over medium heat.
Add the chopped onion to the skillet and fry until golden.
Strain the boiled potatoes and transfer them to a bowl.
Mash the potatoes and mix in the remaining olive oil, black pepper, and salt.
Add the fried onions to the mashed potatoes and mix well.
Prepare a bowl of water to soak the rice papers.
Grease the working surface with a little olive oil.
Take a rice paper and soak it in water for about 25 seconds until softened.
Remove excess water from the rice paper and place it on the flat surface.
Add a spoonful of mashed potatoes in the center of the rice paper.
Fold the sides of the rice paper over the filling to form a sealed shape.
Prepare a baking tray lined with baking paper and spray with baking spray.
Repeat the process with 3 rice papers, overlapping them slightly.
Spread mashed potatoes over the combined rice papers.
Roll the rice papers with the filling into a long roll.
Curl the roll into a snail shape and place it on the baking tray.
Beat the egg and brush it over each bourekas.
Sprinkle sesame seeds on top of the bourekas.
Preheat the oven to 355°F (180°C).
Bake the bourekas in the oven for 25-30 minutes until golden brown.
