Preheat the oven to 380°F (193°C).
Wash and peel the sweet potatoes, removing any unsightly pieces.
Place the sweet potatoes on a sheet pan.
Defrost 4 tablespoons of unsalted butter until soft.
In a bowl, combine the softened butter with about 1.5 tablespoons of brown sugar and a pinch of black pepper, whisking until mixed.
Pour the butter mixture over the sweet potatoes and mix to coat each piece.
Bake the sweet potatoes in the oven for 15-25 minutes until tender.
Chop garlic and onion for the filling.
Heat a little extra virgin olive oil in a skillet over medium heat.
Add the ground beef to the skillet and cook until browned, stirring occasionally.
Add the chopped onion and garlic to the skillet with the ground beef.
