Maple Glazed Ham

Welcome back, family. I'm no chef, but I'll be cooking it today. We're going to be making some of my favorite Thanksgiving recipes that I ate growing up, starting off with a maple glazed ham, all vegan style.

For our cornbread dressing, we're going to need 1 and 1/4 cups of almond milk or any plant milk, preferably unsweetened, and 2 tsp of apple cider vinegar. Mix thoroughly, then set that to the side until we need it.

Grab a large mixing bowl. Add 1 cup of flour, 1 and 1/4 cups of cornmeal, baking soda, baking powder, salt, and coconut sugar. Whisk this up until fully combined and set that aside.

Melt 4 tbsp of vegan butter in a small bowl using the auto menu on the Toshiba combo oven. Set that melted butter to the side.

To the almond milk mixture, add a flax egg, melted butter, and 3 tbsp of maple syrup (optional). Pour the wet mixture into the dry mixture and mix until fully combined, being careful not to over mix.

Pour the batter into an 8x8 baking pan sprayed with avocado oil or non-stick spray. Preheat the Toshiba combo oven to 375°F for about 5 to 10 minutes.

Once the cornbread is done, let it cool for later. Next, for the maple glaze ham, grab a large mixing bowl and add 1 and 1/4 cups of vital wheat gluten and set that aside.

In a food processor, add 1 cup of chickpeas, 3/4 cups of veggie broth, avocado oil, nutritional yeast, liquid smoke, soy sauce, tomato paste, maple syrup, smoked paprika, ground cloves, onion powder, and garlic powder. Process until completely smooth.

Pour the wet mixture into the dry mixture and mix until a dough starts to form. Knead the dough for about 30 seconds and shape it into a loaf. Transfer it to a steam basket and add 3 to 4 cups of no chicken broth or veggie broth to the pot. Cover and bring to a boil, then reduce to simmer and steam for about an hour.

Once the vegan ham is done, set it aside. For the glaze, melt 4 tbsp of vegan butter in the Toshiba combo oven. In a large mixing bowl, add melted vegan butter, coconut sugar, maple syrup, dijon mustard, and salon cinnamon. Mix until smooth.

Preheat the Toshiba combo oven again. Score the vegan ham by cutting diagonal lines to create a checkered effect. Optionally, place cloves in the corners of the diamonds for decoration.

Drizzle some maple glaze on the bottom of your baking dish and add 5 to 7 pineapple rings. Place the ham on top and drizzle with glaze, reserving some for later.

Cook at 425°F for about 30 minutes, basting halfway through. After 15 minutes, take it out, drizzle with more glaze, and return to the oven for the remaining 15 minutes.

Once done, the exterior should be slightly crispy. Top with the rest of the glaze and serve, or set aside for later.
