Peel the malanga, which is the most difficult part of the recipe.
Dice the malanga and place it into a pot of water.
Add 1 tablespoon of salt to the water with malanga.
Bring the water to a boil and then simmer for 12 to 15 minutes until the malanga is soft.
While the malanga is cooking, chop the mushrooms and garlic.
Dice the onions and sauté them in olive oil.
Season the sautéed mixture with salt and black pepper to taste.
Lower the flame on the sautéed mixture to keep it translucent, not brown.
Use skim milk to warm up the mixture instead of heavy cream for a healthier option.
Once the malanga is cooked, drain it and combine it with the sautéed mixture.
