Make cream cheese pound cake by mixing 4 sticks of butter and 1 block of cream cheese until well combined.

In a bowl, combine 2 cups of all-purpose flour, 2 teaspoons baking soda, 0.5 teaspoon salt, 1.5 teaspoons ground cinnamon, and 0.5 teaspoon nutmeg; whisk and set aside.
In a separate bowl, combine 1 cup vegetable oil, 0.75 cup granulated sugar, brown sugar, and 1 teaspoon vanilla extract.
Add 4 eggs one at a time, whisking in between.
Gradually add dry ingredients and fold until no dry flour remains.
Add 3 cups of peeled and grated carrots and fold in.
Separate the batter between the two cake tins and bake at 350°F for 35 minutes until a toothpick comes out clean.
Let the cakes cool completely before frosting.
For peach cobbler, slice fresh peaches and mix with brown sugar, white sugar, cinnamon, nutmeg, cornstarch, and lemon juice.
Coat the peaches and bake in the oven at 425°F for about 10 minutes.
Combine flour, brown sugar, white sugar, baking powder, and butter with a pastry cutter until crumbly.
Add 0.25 cup of boiling water to bring the mixture together.
Spread the topping over the peaches, sprinkle with cinnamon and sugar, and bake for 30 minutes.
