1 cup coconut milk
1/3 cup sugar
zest of 1 lime
2 cups coconut milk
1 teaspoon vanilla
1 cup fresh watermelon
1 tablespoon chopped mint
juice of 1/2 lime

Warm 1 cup of coconut milk in a pot.

Add 1/3 cup of sugar to the warm coconut milk.

Add the zest from 1 lime to the mixture for flavor.

Bloom sheet gelatin in cold water for a few minutes until soft.
