Prep your apple by coring it using an apple corer and then peeling it with a knife.
Dice the apple into medium-sized pieces and place them in a bowl.
Add 1 teaspoon of fresh lemon juice to the diced apples and stir to prevent browning.
In a bowl, mix together 1/2 cup packed light brown sugar and 2 teaspoons of ground cinnamon to create cinnamon sugar.
In a medium bowl, combine 1 1/2 cups of all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of table salt, whisking until well combined.
In a large bowl, mix together 1/2 cup of applesauce, 2 extra large eggs, 2/3 cup of white sugar, 1 1/2 teaspoons of pure vanilla extract, and 1/2 cup of apple juice, whisking until well incorporated.
Slowly add the dry ingredients to the wet ingredients, whisking until just blended, being careful not to over mix.
Spray a loaf pan generously with baking spray and pour in half of the batter.
Layer half of the diced apples and sprinkle half of the cinnamon sugar on top.
Pour in the remaining batter, followed by the rest of the diced apples and the remaining cinnamon sugar.
Bake in a preheated oven at 350°F for about 50 minutes.
Once baked, let the bread cool before transferring it to a cake plate and slicing.
