In a medium bowl, add apples cut into small pieces, brown sugar, and ground cinnamon. Stir until the apples are coated.
Add freshly squeezed lemon juice and stir again to coat the fruit completely. Set aside.
In another bowl, combine all-purpose flour, ½ tablespoon of ground cinnamon, baking powder, baking soda, ground ginger, and ground sea salt. Whisk until well blended and set aside.
In the bowl of a stand mixer, add butter and granulated sugar. Process on medium-high speed until creamy, about 2-3 minutes.
Clean the sides and bottom of the bowl, then add eggs one at a time, mixing well between each addition.
Add sour cream and pure vanilla extract, process for about 45 seconds until blended.
Add half of the dry ingredients and half the milk, process on low speed until just combined.
Add the remaining dry ingredients and the rest of the milk, process until just combined. Clean the sides and bottom of the bowl.
In a greased 9x5 loaf pan, spoon about a third of the batter, followed by 2/3 of the apple mixture, spreading it evenly.
Add another third of the batter, then the remaining 1/3 of the apple mixture including juices, and the rest of the batter.
In a bowl, mix brown sugar, all-purpose flour, ground cinnamon, melted butter, and ¼ cup of chopped walnuts to make the streusel.
Scatter the streusel on top of the bread and spread it out evenly.
Transfer to a 350ºF preheated oven and bake for 70 minutes or until a cake tester comes out clean with a few crumbs.
Remove from the oven and transfer the loaf pan onto a wire rack to cool completely.
