2 tablespoons apple cider vinegar

1 cup green bell pepper, chopped
1 cup tomatoes, diced
1 cup purple onions, chopped
2 tablespoons Mazola vegetable oil
1 tablespoon brown sugar
1 cup Jamaican Choice coconut milk
1 green Scotch bonnet pepper, chopped
1 tablespoon thyme, fresh
1 cup chopped red onions
1 cup red bell peppers, chopped
2 cups Basmati Carolina rice
1 cup pumpkin, diced
1 tablespoon pimento seeds
1 can Grace ackies in salt water, drained
