Peel the pumpkin and cut it into small chunks for the rice.
Boil the sawfish at least two to three times to reduce saltiness, or soak it overnight in cold water if preparing ahead.
Cut the red sweet pepper into small pieces.
Prepare the shrimp by seasoning it with half a tablespoon each of seasoning salt, onion powder, garlic powder, and all-purpose seasoning, and a quarter tablespoon of black pepper.
Boil the sawfish, then check the saltiness and decide if further boiling is needed.
Cut the fresh coconut into pieces and blend with coconut water to make coconut milk.
Combine the long-grain rice, coconut milk, and water in a pot.
Add red kidney beans, chopped green onions, minced garlic, thyme, allspice, and salt to the pot.
Add the whole scotch bonnet pepper for flavor without excessive heat.
Bring the mixture to a boil over medium-high heat.
Reduce heat to low and cover the pot tightly.
Simmer for 20-25 minutes until rice is tender and liquid is absorbed.
Remove from heat and let sit covered for 5 minutes.
Fluff rice with a fork and discard the scotch bonnet pepper before serving.
