1

Wash chicken pieces thoroughly and remove excess fat and skin.

2

In a bowl, combine chopped cilantro, onion, celery, ketchup, cinnamon stick, star anise, cinnamon powder, paprika, red chili powder, garlic powder, chicken bouillon, italian seasoning, and brown sugar.

3

Add red food coloring to the mixture.

4

Mix all ingredients well to coat the chicken pieces evenly.

5

Cover the bowl and marinate the chicken in the refrigerator overnight or for at least 3-4 hours.

6

On the day of cooking, heat cooking oil in a pan and add a few cloves and dry thyme leaves to flavor the oil.

7

Add the marinated chicken pieces to the pan, spreading them out to ensure they touch the bottom of the pan.

8

Reduce heat to low and cover the pan, allowing the chicken to cook in its own juices for about 10-15 minutes.

9

After 10 minutes, check the chicken and flip it over to cook the other side for another 10 minutes.

10

Continue to simmer until the sauce reduces and the chicken caramelizes slightly, checking for doneness and adjusting seasoning as needed.
