Almond Flour Chocolate Chip Cookies

Preheat the oven to 350°F (180°C).

Line a baking tray with parchment paper and set aside.

In a large bowl, place softened butter and sugar.

Cream butter and sugar until light and fluffy.

Add 1 large egg and vanilla extract, and mix until incorporated.

Add almond flour, baking soda, and salt, and mix until a smooth dough forms.

Add chocolate chips and stir to evenly distribute.

Using a medium-sized ice cream scoop, scoop portions of dough and drop onto the prepared baking tray, leaving space between each cookie.

Slightly flatten the cookies and top with extra chocolate chips (optional).

Bake in the oven until done.

Let the cookies cool slightly on the baking tray, then transfer to a cooling rack to cool completely.
