Preheat the oven to 200°C (400°F).

Cut cod fillet and Pollock fillet into finger-sized pieces, aiming for equal sizes for even cooking.

Crack 1 large free range egg into a bowl and whisk it.

In a separate bowl, combine 85 g of wholemeal bread crumbs, 1 teaspoon of dried oregano, 1 teaspoon of smoked paprika, a pinch of pepper, and a pinch of salt. Mix well.

Add the zest of 1 lemon to the breadcrumb mixture and combine.

Prepare a baking tray by lining it with greaseproof paper and lightly brushing it with about half a tablespoon of oil.

Dredge each fish finger into the egg, then roll it in the breadcrumb mixture, ensuring it's well coated, and place it on the prepared tray.

Repeat the process until all fish fingers are coated and on the tray.

Place the tray in the preheated oven and bake for 20 minutes until cooked through.
