Add curry powder and stir for 1 minute to bloom the spices.
Incorporate diced bell pepper and tomato; cook until softened, about 3-5 minutes.
Add corn and stir to combine with the spices and vegetables.
Pour in coconut milk and bring to a simmer, cooking for 5-7 minutes.
Add chopped cilantro and lime juice; stir to combine.
Season with salt and black pepper to taste.
If using, add finely chopped scotch bonnet pepper for heat; mix well.
Simmer for an additional 2-3 minutes to meld flavors.
Serve warm as a side dish.
