Cut 1 pound of chicken breast into thin pieces.

Season the chicken with 1 tablespoon of soy sauce, 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1 teaspoon of salt, 0.5 teaspoon of ground black pepper, 0.5 teaspoon of baking powder, and 0.25 cup of tapioca starch.

Mix in 100 ml of ice water and stir everything together.

Beat the mixture with a spoon for about 2 minutes.

Grease a mold with vegetable oil and place the chicken mixture into it.

Cover the mold with aluminum foil and add water to the bottom of the pot for steaming.

Bring water to a rolling boil in an old pot.

Place the mold with the chicken mixture into the pot and steam for about 20 to 25 minutes.
