Preheat the oven to 450°F (232°C).
Take cream cheese out of the refrigerator 2 hours before using to bring it to room temperature.
In a bowl, mix 1/4 cup honey into the cream cheese until well combined.
Add 1 tablespoon of vanilla paste to the cream cheese mixture and incorporate well.
Transfer the cream cheese mixture into a piping bag or Ziploc bag for easy application.
Score and slice fresh peaches into thin, even slices.
Drizzle granulated sugar over the sliced peaches to enhance flavor.
Take puff pastry out of the refrigerator 30 minutes before using to keep it firm.
Cut the puff pastry into squares and cut a smaller square in the center of each piece.
Use a fork to poke superficial holes in the smaller square of the pastry.
Pipe the cream cheese mixture into the center of the pastry.
Add the sliced peaches on top of the cream cheese filling.
Brush the edges of the pastry with an egg wash made from 1 egg and a splash of water.
Sprinkle a little granulated sugar on top of the pastry before baking.
Place the pastry in the preheated oven and bake for 15 minutes or until golden brown.
Once baked, drizzle a little honey over the top of the pastries for shine.
Dust with powdered sugar before serving.
