Pat the chicken dry and remove the giblets, keeping the neck and other parts except the liver.
Cover the chicken with water and bring to a boil for 30 minutes.
Chop celery, onions, leeks, and parsnip to add flavor to the broth.
Melt 6 tablespoons of butter in a pot and wilt the vegetables for 6-8 minutes.
Combine the boiled chicken with the wilted vegetables and add half a cup of Pinot Gris, parsley, bay leaves, peppercorn, and salt.
Cook for almost 2 hours, then remove the chicken and strain the broth into a clean dish.
Let the chicken cool, then shred it into strips or chunks and refrigerate the broth overnight to separate the fat.
Reheat the broth and whisk 4 egg yolks in a bowl.
Slowly add 2 cups of heavy cream to the egg yolks while stirring constantly to avoid curdling.
Add the shredded chicken back into the broth and stir in a couple of tablespoons of fresh lemon juice.
Cook for 10 minutes and adjust seasoning with pepper and parsley before serving.
