Pour 2 L of water into a pan and bring it to a boil.

Grate a head of cauliflower into the boiling water.

Once the cauliflower is cooked, remove it from the heat.

Transfer the cooked cauliflower to a large bowl.

Add 1 teaspoon of salt, a drizzle of olive oil, 3 whole eggs, and 100 g of wheat flour to the bowl and mix all the ingredients together very well.

Transfer the mixture to a greased rectangular baking dish and spread it evenly.

In a skillet, add a drizzle of olive oil and add 1 chopped onion, 1 chopped carrot, and 200 g of chopped Paris mushrooms.

Sauté the vegetables very well.

Add 1 chopped tomato, 1 chopped green bell pepper, and 1 chopped red bell pepper to the skillet.

Season the mixture with 1 teaspoon of salt and a pinch of black pepper, then sauté again.

Transfer all the sautéed vegetables to the baking dish with the cauliflower mixture and spread it out evenly.

Add 200 g of grated cheddar cheese on top of the mixture in the baking dish.

Take the baking dish to a preheated oven at 180° C (350° F) and bake for 40 minutes, keeping an eye on it as the time may vary depending on the oven's power.
