1/2 cauliflower (600-700g)
3 medium eggs
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/2 teaspoon of paprika
1 teaspoon of dried parsley
1 teaspoon of provencal herbs
1 teaspoon of onion powder
1 teaspoon of garlic powder
3/4 cup of all purpose flour (100g)
3/4 cup of breadcrumbs (100g)
1/2 cup of grated parmesan cheese (45g) - optional
olive oil
1 tablespoon mustard
1 tablespoon of lemon juice
1/2 teaspoon of garlic powder
1/4 teaspoon of salt
a pinch of black pepper
2-3 tablespoon olive oil
2-3 tablespoons milk

Cut 1/2 cauliflower into small florets and wash well.

In a mixing bowl, combine 3 medium eggs, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of paprika, 1 teaspoon of dried parsley, 1 teaspoon of provencal herbs, 1 teaspoon of onion powder, and 1 teaspoon of garlic powder.

Add 3/4 cup of all purpose flour and mix until florets are all coated.

Add 3/4 cup of breadcrumbs and 1/2 cup of grated parmesan cheese (optional), then mix all well.

Sprinkle some paprika on top (optional).

Drizzle olive oil on a baking sheet and place the mixture on it.

Bake at 180ºC (356ºF) for 25-30 minutes.

For the sauce, mix 2 hard-boiled eggs, 1 tablespoon mustard, 1 tablespoon of lemon juice, 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, a pinch of black pepper, 2-3 tablespoon olive oil, and 2-3 tablespoons milk until you get a smooth sauce.
