Prepare the pork belly by cutting it into 5cm cubes.
In a pot, combine the pork belly, green onion, ginger, and water. Bring to a boil and then simmer until tender.
Add the low-sodium soy sauce, sake, and sugar to the pot and continue to simmer until the sauce thickens.
For the lotus root and shrimp filling, slice the lotus root into 4-5mm thick pieces and coat both sides with potato starch.
Mix the peeled shrimp with grated ginger juice, shiso leaves, salt, and potato starch.
Sandwich the shrimp mixture between two slices of lotus root and deep-fry in oil heated to 170°C until golden brown.
For the dashi rolled omelet, whisk together the eggs, dashi broth, and low-sodium soy sauce.
Cook the egg mixture in a pan, rolling it to form an omelet.
