Put sugar in a pot and heat on low while stirring until completely melted, then add baking soda and mix quickly before pouring onto parchment paper to set flat.

Crush Lotus cookies and mix with melted unsalted butter, then press into a 15cm mold and refrigerate.

Break the set dalgona into pieces and place some in a zip bag to crush finely.

Soften cream cheese at room temperature and mix with sugar, vanilla extract, and lemon juice.

Add melted gelatin and mix, then fold in the whipped cream and crushed dalgona.

Pour the mixture into the mold and smooth the top, then freeze for about 1 hour.

Wrap the mold with a steam towel to slightly melt the outside, remove the mold, slice, and top with dalgona.
