Heat vegetable oil in a large pot over medium heat until shimmering.
Brown the duck pieces on all sides, about 5-7 minutes.
Remove the duck and set aside; add chopped onions to the pot.
Sauté onions until translucent, about 3-4 minutes.
Add grated carrots and minced garlic; cook for another 2-3 minutes.
Stir in rice and cook for 2-3 minutes until slightly toasted.
Return the duck to the pot and add broth, spices, bay leaves, salt, and pepper.
Bring to a boil, then reduce heat to low and cover.
Simmer until rice is tender and liquid is absorbed, about 20-25 minutes.
Remove from heat and let sit covered for 10 minutes.
Fluff the rice with a fork and mix in dried fruits and nuts before serving.
