Add one small beet to a small pot and cover it with enough water until completely submerged.

Set the pot on the stove at medium-high heat and let it simmer for around 30 to 45 minutes or until soft enough to be pricked with a fork.

Check if the beet is ready, then cut off the ends and peel it.

Warm 1 cup of plant milk in the microwave on high for at least a minute and a half.

In a blender, add the peeled beet, 1/4 teaspoon cinnamon, 1/4 teaspoon nutmeg, and the warmed plant milk.

Add 1 teaspoon of agave syrup or honey to the blender.

Pulse the mixture in the blender until smooth.

Pour the latte mixture into a cup.
