Heat mustard oil in a pan.
Add 2 dry red chilies to the oil.
Wait until the oil is hot and the chilies are fragrant.
Add fresh red spinach to the pan without adding any extra water, as it will release its own water.
Cover the pan and let the spinach cook in its own water.
Add salt according to taste and mix well.
Continue to cook until the spinach is fully wilted and the water has evaporated.
Serve the cooked red spinach with rice or roti.
