Preheat the Blackstone griddle to medium, then reduce to medium-low.
Cook 4 pieces of Wright's thick cut bacon until crispy, rendering out the fat.
Move the cooked bacon to the cooler side of the griddle.
Slice 2 sweet yellow onions thinly and add them to the bacon fat on the griddle.
Season the onions with a touch of essential blend seasoning and toss them.
Caramelize the onions until golden, which will take about twice as long as the bacon.
When the onions are 80% done, add mushrooms and a little more essential blend seasoning and butter.
Cook the mushrooms with the onions for 7 to 10 minutes, allowing them to soak up the flavors.
Remove the onions and mushrooms from the griddle and set aside.
Increase the heat on the griddle to high for cooking the beef.
Form two patties from Kobe beef, each about 6 to 8 ounces, loosely packed.
Place the patties on the griddle without smashing them immediately.
After a moment, flip the first patty to create a cooked area for smashing.
Smash the patty down to the desired thickness without it sticking to the griddle.
Season the patties with essential blend seasoning or SPG (salt, pepper, garlic).
Prepare a simple sauce by mixing mayonnaise and spicy brown mustard.
Once the burgers are nearly done, flip them and top with the caramelized onions, mushrooms, and a slice of Tillamook swiss cheese.
Cover the burgers with a dome to melt the cheese.
Toast onion rolls on the griddle until golden.
