Heat a couple tablespoons of butter and a little bit of oil in a skillet.
Add cleaned and dried white mushrooms and chopped onion to the skillet.
Cook the mushrooms and onions for about 7 to 8 minutes until browned and softened.
Remove the mushrooms and onions from the skillet.
Place a room temperature hamburger patty on the skillet.
Season the patty with salt and steak seasoning.
Cook the patty on medium heat without disturbing it for about 2.5 minutes until it starts to shrink and sear.
Flip the patty and cook for another 2 minutes.
Add a slice of Swiss cheese on top of the patty and cook for about 30 seconds, optionally covering with a lid to help it melt.
Remove the patty from the skillet and place it on a plate to avoid soggy buns.
Butter the Brioche buns and toast them in the skillet until nice and toasty.
Build the burger by placing the patty on the bottom bun, adding garlic aioli or mayonnaise on the top bun.
