Slice off both ends of the onion and chop it in half.
Remove the onion skin and slice into roughly quarter inch slices.
Slice the mushrooms about a quarter inch thick.
Place the sliced onions and mushrooms into a bowl.
Preheat the flat top griddle on medium heat for about five minutes.
Check the temperature of the griddle; it should be around 400 degrees on one side and 350 on the other.
Add bacon fat to the griddle to oil it up.
Add the sliced onions and mushrooms to the griddle and mix them together.
Season the onions and mushrooms with pulsed BBQ beef rub.
Cook the onions and mushrooms until soft and browned, about 10 minutes.
Move the cooked onions and mushrooms to the side of the griddle.
Place the first ball of ground beef onto the grill and let it warm for about 30 seconds.
Smash the beef ball down on the grill using parchment paper.
Season the smashed burger with pulsed BBQ beef rub.
Let the burger cook for a few minutes to form a crust.
Add the brioche buns to the griddle to toast them.
Flip the smashed burger and check for color.
Add swiss cheese on top of the flipped burger.
Check the buns to ensure they are toasted.
Let the burgers cook for another minute to melt the cheese, optionally covering with a dome to speed up the process.
Move the burgers to the cool side of the griddle.
Build the burgers by spreading mayonnaise on the bottom and top buns.
Add the burger patty to the bottom bun.
Top the burger with a generous helping of the cooked onions and mushrooms.
Crown the burger with the top bun.
