Start by placing a firestarter at the base of the charcoal basket and filling the basket with charcoal. Light the firestarter and let it heat up until it reaches high heat.
Form the patties: Divide the beef into equal portions and shape them into small balls about the size of a tennis ball (roughly 4oz). Pre-smash these patties in between 2 parchment paper using a plate.
Make cheese sauce: In another pot, melt butter over medium heat, add flour to make a roux, then gradually whisk in milk until thickened. Stir in grated Swiss cheese until melted. When it thickens to your desired thickness, place it off heat.
Once the charcoal is ready, spread it evenly on your grill in a square shape. Place the grill grate over the charcoal and the vegetable grilling pan to preheat it. Cover with a lid for 5 minutes.
Cut the onions and mushrooms and place them in a bowl. Mix in the olive oil, salt, and pepper, and toss until well combined.
Grill the mushrooms and onions: Place them on the vegetable grill pan and grill until they are nicely brown and soft. Once cooked, remove them from the heat.
Salt the patties on one side and place them on the grill, salted side down. Sprinkle some salt and ground black pepper on the other side. Let the burgers cook for a few minutes until the edges start to brown, about 2 minutes.
Flip the burgers and cover with a lid to cook for 1-2 minutes. Use a meat thermometer to ensure they are cooked. When they reach 160F, they are done.
Assemble your burgers: Place burger patties on buns, top with sautéed mushrooms and onion mixture, and a generous serving of Swiss cheese sauce.
