4 cups vegetable broth
2 packs ramen noodles
1 cup sliced shiitake mushrooms
1 cup baby spinach
1/2 cup sliced green onions
1/2 cup corn kernels
2 cloves garlic, minced
1 inch ginger, grated
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp chili oil (optional)
1/2 tsp salt
1/2 tsp black pepper
2 soft-boiled eggs (optional, for non-vegan)

In a large pot, heat the sesame oil over medium heat.

Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.

Add the sliced shiitake mushrooms and cook for another 3-4 minutes until they soften.

Pour in the vegetable broth and bring to a simmer.

Stir in the soy sauce, salt, and black pepper. Let it simmer for 5 minutes.

Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes.
