¾ cup water
1 dried shiitake mushroom
1 kombu (1" x 2")
1 Tbsp sesame seeds
2 cloves garlic
½ inch ginger
1 scallion
2 tsp sesame oil
2 tsp chili bean paste
2 tsp miso
1 Tbsp sake
1 Tbsp sesame seeds
2 tsp soy sauce
1 cup soy milk
½ cup dashi
white pepper
¼ tsp salt

In ¾ cup water, add 1 dried shiitake mushroom and 1 kombu (1" x 2"). Let it soak for 30 minutes.

Transfer the liquid into a small saucepan, including the kombu and shiitake mushroom.

Bring the liquid to a boil over low heat.

Grind 1 Tbsp sesame seeds.

Remove kombu and shiitake before the liquid reaches a full boil.

Press 2 cloves of garlic and mince ½ inch ginger.

Separate the green and white parts of one scallion and cut into thin rounds.

In a small saucepan, add 2 tsp sesame oil, minced ginger, 2 cloves garlic, and the white parts of the scallion.

Cook over medium-low heat until fragrant.

Add 2 tsp chili bean paste and 2 tsp miso, mixing well.

Add 1 Tbsp sake, 1 Tbsp sesame seeds, 2 tsp soy sauce, and 1 cup soy milk, stirring constantly.

Add ½ cup dashi, white pepper, and ¼ tsp salt, cooking the mixture.

Cook ramen following package instructions.

Transfer the ramen to a bowl and pour the hot ramen soup into the bowl.
