Today, variations exist globally, with many adapting the recipe to include different cheeses or seasonings, making it a versatile treat for all occasions.

In a bowl, combine 500 g of polvilho azedo and 10 g of salt, mixing well.
In a small saucepan, combine 160 ml of water, 160 ml of milk, and 160 ml of oil, and bring to a boil.
Once boiling, pour the hot liquid over the polvilho mixture and mix with a spoon until a coarse dough forms.
Continue mixing until the dough is moist and starts to cool down.
Once cool enough to handle, knead the dough for a few minutes until it becomes smoother.
Add eggs one at a time, kneading well after each addition until the dough reaches the right consistency.
The amount of eggs needed may vary based on their size; the creator used 4 medium eggs.
Add 25 g of packaged grated cheese to the dough for extra flavor.
Add 200 g of grated mozzarella cheese to the dough, mixing thoroughly.
Take small portions of dough (approximately 30 g each) and roll them into balls.
Place the balls on a greased 25x35 cm baking dish.
Optionally, freeze the dough balls for later baking or bake immediately in a preheated oven at 180ºC for 30 minutes or until golden brown.
Remove from the oven and enjoy the pães de queijo, which should be crispy on the outside and airy on the inside.
