Boil beets until tender or roast in the oven.
Cut 2 potatoes into small chunks.
Cut carrots into small pieces.
Prepare hard-boiled egg and cut into pieces.
Rinse canned sweet peas.
In a pot, add butter and turn the stove on high to melt it.
Add diced onions and green bell peppers to the pot and sauté until halfway cooked, about 1 minute.
Add evaporated milk to the sautéed vegetables to create a sauce.
Turn the stove down to low and add Laughing Cow cheese and a little cream cheese to the pot, allowing it to melt.
Season the sauce with crushed black pepper and salt, then taste for flavor.
Allow the sauce to cool down after cooking for a few minutes.
In a mixing bowl, combine boiled beets, diced carrots, sweet peas, cubed potatoes, and hard-boiled egg.
Add the cooled cheese sauce to the vegetable mixture.
Add mayonnaise and season with more black pepper and salt to taste.
Mix all ingredients thoroughly until well combined.
