1

Preheat the oven to 375°F.

2

Spray a 13 by 9 inch pan with non-stick cooking spray.

3

In a large skillet, brown 1 pound of lean ground beef until no longer pink.

4

Drain excess grease from the beef.

5

Add 2/3 cup water and the taco seasoning mix to the beef, stirring frequently for 3-4 minutes until thickened.

6

Stir in 10 ounces of red enchilada sauce, 15 ounces of drained and rinsed black beans, 1 cup of shredded Mexican cheese blend, and 1/2 cup of sliced green onions, and heat until thoroughly heated.

7

Separate 1 can of flaky layers refrigerated biscuits into 8 separate biscuits and cut each into 8 pieces.

8

In a bowl, combine the biscuit pieces with the beef mixture, stirring until well combined.

9

Dump the mixture into the prepared 13 by 9 inch pan and spread it out evenly, ensuring biscuits are not clustered together.

10

Bake in the preheated oven at 375°F for 20-25 minutes until the biscuits are browned and thoroughly cooked.

11

After 25 minutes, add 1 cup of cheese on top and return to the oven for another 5 minutes until the cheese is melted.

12

Remove from the oven and garnish with additional green onions, diced tomatoes, black olives, guacamole, and sour cream before serving.
