Sarmale, or stuffed cabbage rolls, are a beloved dish in Romanian cuisine, traditionally made with meat. However, the vegetarian version, Sarmale de Post, is popular during Lent and other fasting periods. This dish showcases the rich flavors of mushrooms and rice, wrapped in tender cabbage leaves, making it a comforting meal. Today, variations can be found across Eastern Europe, with each region adding its unique twist.

Chop the onion and mushrooms finely, and grate the carrots.
Heat olive oil in a pan and sauté the grated carrot, chopped onion, and red bell pepper.
Add mushrooms to the pan and cook until softened, about a few minutes.
Season the mixture with a bit of salt, then add the soaked rice and cook for another few minutes.
Add a bit of black pepper and mix well; the filling is ready.
Prepare the cabbage by cutting off the core and separating the leaves one by one.
Take a cabbage leaf, place a spoonful of filling at the base, and roll it tightly.
Chop the remaining cabbage and layer it at the bottom of a clay pot.
Add dried dill and thyme, and a few tablespoons of tomato juice over the cabbage layer.
Arrange the rolled cabbage in the pot, add more chopped cabbage on top, and cover with water.
Cover the pot and place it in a preheated oven to bake for two hours.
