Berry & Chia Pudding

1 cup coconut milk
2 handfuls of raspberries
3–4 T chia seeds
2 T maple syrup
Woolworths Coconut Yoghurt or Plain Cultured Coconut
fresh lime zest
blackberries
raspberries
crushed pistachios

Blend together 1 cup coconut milk with 2 handfuls of raspberries.

Fold through 3–4 T chia seeds and 2 T maple syrup (or to taste).

Divide between two bowls or glass jars and leave to set in the fridge for 3–4 hours or overnight.

Top with Woolworths Coconut Yoghurt or Plain Cultured Coconut and fresh lime zest.

Add juicy blackberries and raspberries and a sprinkle of crushed pistachios if you like.
