Raspberry Cheesecake

200g (8-10) Biscuits
1/4 cup (60g) Melted unsalted butter
150g raspberry
1/4 cup (50g) sugar
1 tsp lemon juice
1 1/4 cup (300ml) Heavy Cream
250g Cream cheese
3tbsp (40g) sugar
1tsp (5g) vanilla
2tbsp (30ml) Water
1/2tbsp (5g) unflavoured gelatine
1/2 tsp lemon juice
50g Raspberry puree
2tbsp (30ml) water
1tsp (3g) gelatine
Remaining raspberry puree

Crush the biscuits and mix them with melted unsalted butter to form the base.

Press the biscuit mixture into a 7 inch ring to create the cheesecake base.

In a bowl, combine raspberry puree, sugar, and lemon juice to make the raspberry layer.

In another bowl, whip the heavy cream until stiff peaks form.

In a separate bowl, mix cream cheese, sugar, vanilla, and lemon juice until smooth.

Dissolve the unflavoured gelatine in water and add to the cream cheese mixture.

Fold the whipped cream into the cream cheese mixture gently.

Add the raspberry puree to the cheesecake mixture and mix well.

Pour the cheesecake mixture over the biscuit base and smooth the top.

Prepare the raspberry jelly by dissolving gelatine in water and mixing with remaining raspberry puree.

Pour the raspberry jelly over the cheesecake layer and refrigerate until set.
