Lemon Wine

Cultural Context

Lemon wine, or 'Limoncello,' originates from the Amalfi Coast in Italy, where the abundant lemon trees thrive in the Mediterranean climate. Traditionally enjoyed as a digestif, it embodies the region's vibrant flavors and is often served chilled. Today, variations of lemon wine can be found globally, with many homebrewers experimenting with different fruits and spices, making it a delightful and refreshing beverage for any occasion.

10 lemons
250 grams of raisins
500 grams of sugar
1 liter of water
yeast
1

Boil 1 liter of water in a pot.

2

Add 500 grams of sugar to the boiling water and turn off the stove to melt the sugar.

3

Squeeze the juice from the 10 lemons and put it directly into the fermenter.

4

Remove the skin from the lemons and add both the skin and the raisins to the water.

5

Wait for the water mixture to cool to room temperature before adding it to the fermenter.

6

Add the yeast to the fermenter and cover it with an airlock.

7

Check the original gravity; it should be around 130, indicating a sweet wine.

8

The next morning, observe the fermentation activity through the airlock and bubbles in the fermenter.

9

After 5 days, remove the raisins and lemon zest from the fermenter, being careful to do this while fermentation is still active to avoid vinegar formation.

10

Wait for fermentation to finish, which is indicated by no more bubbles and a final gravity reading of around 150.

11

After fermentation is complete, transfer the wine to a bottle and refrigerate it for clarity.
