Candied Citron Peel

4 cups citron peel
2 cups granulated sugar
1 cup water
1/2 tsp salt
1/2 tsp lemon juice
1/2 cup granulated sugar (for coating)

Wash the citron thoroughly and cut it into quarters, removing any seeds.

In a large pot, combine the citron peel, water, and salt. Bring to a boil over medium heat.

Once boiling, reduce the heat and simmer for about 30 minutes until the peel is tender.

Drain the citron peel and set aside to cool slightly.

In the same pot, combine 2 cups of sugar and 1 cup of water. Bring to a boil, stirring until the sugar dissolves.

Add the citron peel back into the pot and simmer on low heat for about 1 hour, stirring occasionally, until the peel is translucent and the syrup thickens.

Remove the citron peel from the syrup and place it on a wire rack to cool for about 30 minutes.

While the peel is cooling, mix 1/2 cup of granulated sugar with lemon juice in a shallow dish.

Once the peel is cool, roll each piece in the sugar mixture to coat evenly.

Place the coated citron peel back on the wire rack to dry completely, about 2-3 hours.
