Start by preparing the ingredients: 500 grams of beef steak and 500 grams of longaniza.

Peel the onion and chop it in half; set aside half for later use.

Remove the skin from the longaniza (optional) and crumble it into a pot.

Add the crumbled longaniza and half of the chopped onion to the pot without any oil, allowing it to cook in its own fat.

Season the longaniza with salt and black pepper to taste.

Once the longaniza is almost cooked, push it to one side of the pot and add the beef steak to the same pot, cooking it in the rendered fat.

If there isn't enough fat, add a little bit of oil to help cook the beef.

Once the beef is cooked, set it aside and mix everything together in the pot.

For the salsa, boil the tomatillos and morita chiles in a small amount of water for about 10 minutes.

After boiling, transfer 2 tomatillos and 2 chiles to a blender with a bit of the cooking water, along with the garlic, the remaining onion, and a pinch of salt.

Blend the mixture until it is smooth and slightly chunky.

Warm the tortillas in a skillet until pliable.

Assemble the tacos by adding the meat mixture to the tortillas, topping with cilantro, chopped onion, and a squeeze of lime juice.
