1 1/2 tbsp flour
1/4 tsp kosher salt
1 pinch white pepper
1/8 tsp nutmeg
4 slices sourdough bread
8 slices Swiss or Gruyere cheese
120g ham slices
4 tsp Dijon mustard
30g unsalted butter
1/2 cup shredded Gruyere cheese
3 tbsp finely shredded parmesan

Preheat oven to 200°C/390°F (180°C fan).

Heat milk and cream in a saucepan over medium heat until steaming, then set aside.

Melt butter in a separate saucepan over medium heat, then add flour and cook for 3 minutes without browning.

While stirring, add half the milk to the roux, then mix in remaining milk, nutmeg, salt, and pepper.
