Tater Tots

3 medium potatoes, peeled and cut into smaller pieces
1/2 teaspoon baking soda
2 tablespoons nutritional yeast
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1 teaspoon white miso (optional, instead of 1/2 teaspoon sea salt)
ketchup for dipping
hot sauce for dipping

Preheat the oven to 500 degrees Fahrenheit.

Line a baking sheet with parchment paper.

Place the cut potatoes into a pot and fill it with water.

Add the baking soda to the pot with the potatoes.

Bring the water to a boil and let the potatoes boil for around 3 minutes.

Drain the potatoes and rinse them in cold water.

Add the potatoes to a food processor along with the nutritional yeast, garlic powder, black pepper, and white miso (if using).

Pulse the mixture until the potatoes are in 1/2 to 1/4 inch pieces, but not mushy.

If the food processor makes the mixture too mushy, use a box grater to grate the potatoes instead.

Wet your hands with water and form the potato mixture into Tater Tot shapes.

Place the formed Tater Tots onto the lined baking sheet.

Bake the Tater Tots in the oven for 15 minutes, then flip them and bake for an additional 15 minutes.

Prepare a dipping sauce by mixing 1/4 cup of ketchup with 1/2 teaspoon of hot sauce.
