1 tablespoon Wonder flour (about 10 grams)

Boil the potatoes in a large pot of water over high heat until simmering for about 30 minutes.

Let the potatoes cool for about 10 minutes until they can be handled.

Peel the potatoes carefully to minimize waste.

Grate the potatoes using a large die grater into a bowl.

Spray the grated potatoes with white vinegar to minimize oxidation.

Add 1 teaspoon of fine sea salt and 1 tablespoon of Wonder flour to the grated potatoes and toss gently.

Form the tater tots using plastic film or a ring mold.

For the plastic film method, lay out the potato mixture on the film, roll it up tightly, and poke holes to release air.
