400g firm tofu
1/4 red bell pepper
3 big cloves garlic

1 tbsp mushroom sauce
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
1/2 tsp rice vinegar

Remove excess moisture from the firm tofu and cut it into cubes.

Cut the red bell pepper into strips (julienned).

Chop the garlic and ginger.

Juice the lime.

Finely chop the spring onions.

In a bowl, mix the vegan Thai chili paste, mushroom sauce, light soy sauce, dark soy sauce, and rice vinegar to create the sauce mixture.

In a pan, heat a little water and add the tofu cubes, cooking until they are lightly browned.

Add the chopped garlic, ginger, and red bell pepper to the pan, sautéing until fragrant.

Pour the sauce mixture over the tofu and vegetables, stirring to combine.
