Mix warm water, sugar, and yeast in a bowl; let sit until foamy, about 5-10 minutes.
Combine flour and salt in a large mixing bowl.
Add the yeast mixture to the flour mixture; stir until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth.
Place the dough in a greased bowl; cover and let rise until doubled, about 1 hour.
Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
Dissolve baking soda in boiling water in a large pot.
Divide the dough into equal pieces and shape each into a pretzel.
Boil each pretzel in the baking soda solution for 30 seconds, then remove and drain.
Place pretzels on the prepared baking sheet; brush with beaten egg and sprinkle with coarse salt.
Bake in the preheated oven for 12-15 minutes or until golden brown.
Let cool slightly before serving.
