Vareniki (Pierogies) Stuffed with Potato and Mushrooms

Measure 6 cups of all-purpose flour into a bowl.
Add 8 eggs to the center of the flour.
Add 1.5 teaspoons of salt to the mixture.
Pour in 1/3 cup of vegetable oil.
Add water as needed to form a dough.
Knead the dough with your hands until smooth.
Prepare the filling by cooking sweet cabbage with 1/2 cup of onion and 1/2 stick of butter until soft.
Boil potatoes until tender, then drain and mash them.
Mix the mashed potatoes with the cooked cabbage and onion mixture.
Add slices of cheese to the potato mixture and combine.
Roll out the dough on a floured surface to desired thickness.
Cut circles from the dough using a glass or cutter.
Place a spoonful of filling in the center of each circle.
Fold the dough over the filling and pinch the edges to seal.
Bring a large pot of salted water to a boil; add pierogies in batches.
Cook until they float to the surface, about 3-5 minutes.
Remove with a slotted spoon and drain.
