1 kg mutton, with bone
salt to taste
1 tsp cumin powder
1 tsp coriander powder
1 tsp paprika powder
2 tbsp Arabic spice powder
500 ml hot water
2 glasses basmati rice
1/4 cup ghee
1 piece onion, large, chopped
6 cardamom pods
4 glasses water
3 pieces tomato, chopped
30 g tomato paste
vegetables (carrot, capsicum, green chili)
dried lemon
yellow food color
red food color
1 piece lemon juice
fresh coriander, chopped

Heat 60 ml cooking oil in a pot until warm

Add whole spices and sauté for 1 minute

Add 3 chopped onions and sauté for 10 minutes until soft

Add 50 g ginger garlic paste and sauté for 10 minutes

Add 1 kg mutton pieces and salt to taste

Add 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp paprika powder, and 2 tbsp Arabic spice powder

Sauté mutton for 15-20 minutes until it releases its water

Add 500 ml hot water and cover, cooking on low flame for 1 hour

In a separate bowl, soak 2 glasses of basmati rice in water for 30 minutes

After 1 hour, check mutton and add 3 chopped tomatoes and 30 g tomato paste

Add vegetables (carrot, capsicum, green chili, dried lemon) and sauté for 10-15 minutes

Add 250 ml hot water and cover, cooking for another 30 minutes on low flame

In another pot, heat 60 g ghee and add 1 large chopped onion and 6 cardamom pods, sauté for 2 minutes

Add 4 glasses of water and salt to taste, bring to a boil

Add soaked rice and cook until rice is fluffy and water is absorbed

Add yellow and red food color if desired and cover with aluminum foil, cooking on low flame for 30 minutes

Check mutton after 30 minutes, sauté for 5 minutes

Add juice of 1 lemon and fresh chopped coriander, cook for 5 more minutes

Serve rice on a platter, placing mutton in the center and garnishing with grilled vegetables and coriander
