1 package taco seasoning mix
4 small flour tortillas
1 cup sour cream
1 cup Mexican cheese blend

Spray a 2-quart baking dish with non-stick cooking spray.

In a large skillet, add 1 pound of ground beef and 1/2 cup of chopped onion. Brown over medium-high heat and drain off any excess liquid.

Add 1/4 cup of chopped jalapeno slices, 1 (14.5 oz) can of diced tomatoes, 1 (15.25 oz) can of drained corn, 1 (15 oz) can of rinsed and drained black beans, and 1 package of taco seasoning mix. Stir together well.

Reduce the heat and let it simmer for about 5 minutes.

Place 4 small flour tortillas into the bottom of the baking dish, overlapping them.

Spread half of the beef mixture over the tortillas.

Spread 1 cup of sour cream over the beef mixture.

Place 4 more small flour tortillas on top.

Add the remaining beef mixture on top of the tortillas.

Cover the dish with foil and bake in the oven for about 25 minutes.
