1

Marinate 8 ounces of your chosen protein with 1 teaspoon of fish sauce, 2 tablespoons of oyster sauce, 1 tablespoon of soy sauce, 1 teaspoon of dark soy sauce, 2 tablespoons of palm sugar, and a pinch of white pepper. Set aside to marinate while preparing other ingredients.

2

Chop 8-10 cloves of garlic and smash the Thai chilies to release oils. Set aside.

3

Slice 1 shallot and 1 large red chili. Set aside with the chilies.

4

Prepare 4-6 ounces of Chinese broccoli or other leafy greens. Set aside.

For the noodles, cut fresh rice noodles into wider pieces. If using dried noodles, soak them in hot water for a few minutes until softened.

Heat a wok until it smokes, then add 2 tablespoons of vegetable oil.

7

Add the shallots, garlic, and smashed chilies to the hot oil and stir-fry until fragrant.

8

Add the marinated protein to the wok and cook until browned and cooked through.

9

Add the Chinese broccoli and stir-fry for 1-2 minutes until tender.

10

Add the prepared noodles and the sauce mixture to the wok, stirring until the noodles absorb the sauce.

11

Add the sliced red chili and Thai basil, then turn off the heat and stir to combine.
