1

Chop wood for the fire pit to cook the chicken curry.

2

Wash and prep the chicken, using Heartfeld farm chicken.

3

Season the chicken with green seasoning and let it rest.

4

Prepare aromatics: scallions, onions, celery, broad leaf thyme, fine leaf thyme, garlic, ginger paste.

5

Light the fire pit and add charcoal for smokiness.

6

Heat oil in the fire pit and add spices: cinnamon stick, cumin, and clove to release flavor.

7

Add aromatics to the oil and sauté until translucent.

8

Add garlic and ginger paste, then mix in the masala and fry until fragrant.

9

Add salt to taste and mix well.

10

Add about 3 cups of water to the masala and let it cook down.

11

Once the water is mostly absorbed, add the chicken and mix well to coat with the masala.

12

Cook the chicken for about 15 minutes, allowing it to absorb the flavors.

13

Add enough water to cover the chicken and let it cook.

14

Grab fresh peppers from the garden and wash them before adding to the pot.

15

Add potatoes to the curry to boil until soft, cooking for an additional 15 minutes.
